Banana Nut Muffins {with chocolate chips}

It’s Sunday morning … and I’m letting this day unfold slow and easy. Last week was a bit of a wild week emotionally. Our youngest started college and this mama is still catching her breath from all the excitement.  So I decided to start the week with a little kitchen therapy.

This recipe is the best traditional banana nut muffin recipe ever. So easy and a family favorite. But this time, I decided to get a little crazy and add chocolate … because isn’t everything better with chocolate?

The Muffin Lady’s Banana Nut Muffins

3 ripe bananas * 1 cup oil * 2 eggs * 1 cup sugar * 2 cups flour * 2 teaspoons baking powder * 1 teaspoon baking soda * 1 teaspoon salt * 1/4 teaspoon mace * 1 teaspoon vanilla * 1/2 cup walnuts, toasted (optional) * 1 cup dark chocolate morsels (optional)

Preheat oven to 350 degrees. Place bananas in a mixing bowl and beat with an electric mixer until pureed or mashed. Add the oil and sugar. Add the eggs one at a time. Sift the dry ingredients. Gradually add the sifted ingredients. Add the vanilla. Fold in the nuts and chocolate (saving a few to sprinkle on top). Bake in a wax paper or parchment lined muffin pan for about 25 minutes.

With or without the chocolate, these muffins are a big hit. They’re my favorite way to brighten someone’s day. And now that you have the recipe, I’m hoping they’ll brighten your day too!
