I wish I could give you a hug.

Cause maybe you were late to work this morning for the third time this week and it’s only Wednesday. Or maybe you raised your voice at your kids ~ got all squeaky and pitchy because they wouldn’t get out the door to school on time. But since I can’t get thru this screen and hug your neck, I’m sharing a recipe for gingerbread pancakes.

And not just any gingerbread pancakes but a special recipe from Austin’s own: Magnolia Cafe.

Magnolia is a happy place. Full of Austinites that make you feel extra comfortable ~ and food that sings of home. Y’all know I’m big on home. And Austin.

So, I had big help with this video. Emily and her friend, Caroline, are the ones who got everything together. They’re the ones mixing up things up. And they ‘tested’ the recipe to make sure it’s just as delicious as the fabulous pancakes at Magnolia. Those girls … so helpful.

Magnolia Cafe’s Gingerbread Pancakes

3 eggs * 1/4 c brown sugar * 1/2 c buttermilk * 1/2 c water * 1/4 c brewed coffee * 2 1/2 c all-purpose flour * 1/2 t baking powder * 1 t baking soda * 1 t ground cloves * 1 T cinnamon * 1 T ginger * 1 T nutmeg * 4 T (1/2 stick) unsalted butter, melted

Cream eggs and sugar together. Stir in buttermilk, water, and coffee and set aside. In a separate bowl sift together remaining dry ingredients. Stir egg mixture into dry ingredients, then mix in melted butter. Add more water or buttermilk if necessary, but batter should be thick.

Cook until done on a lightly greased hot griddle or in a heavy skillet (turn once when bubbles appear on upper side and start to break). Pancakes will be thick and cake-like in texture. Makes 8 to 10 five-inch pancakes.

    Susie, these remind me of my Mom ( miss her), as she would always order these when we would come back in town for a visit. She called them “cookies” for breakfast! HA! Thanks for the recipe! Janet and I will have to try and take a little Magnolia home with us this weekend and give this a try.

    I love love LOVE these pancakes at Magnolia. I order them there with chocolate chips and bananas added…….You know, on those days when I’m not on my diet! I also love their corn cakes; which I order with jalapenos and feta. I like how everything at Magnolia is made to order; so they can modify it however you want and they are always happy to do so!
