Chicken Pot Pie

Veggie Sandwich w. Avocado Dressing

I have missed eating sandwiches since I fasted that squishy bread with sugar in it. And although I’m glad that I have a new healthy habit eating no sugar Ezekiel type breads because of The 21 Day Fast Diet … I really missed having a nice sandwich.

But no more because today I discovered a simple and delicious veggie sandwich with that thick, awesome avocado dressing recipe I shared last week. Matter of fact, I think the dressing is better on this sandwich than on the wedge salad.

Avocado Dressing

What can’t an avocado do? Cute little thing.

From Pico de Gallo to Avocado Cucumber Chutney to a delightful dressing. Mmmm.

I found the recipe for this dressing when I was at Central Market last week.  As usual, there were all kinds of testing stations at the store. The gal that whipped up this recipe was serving the dressing mixed in a cabbage slaw ~ to accompany a spicy pork tenderloin. It was delicious.

Avocado Vinaigrette

1 medium avocado * 1/4 c fresh lime juice * 1/4 c wine vinegar * 1 c roughly chopped cilantro * 1/2 t honey * salt & pepper to taste

Combine all ingredients in a food processor. (I used a blender. I also added a little vegetable oil to further emulsify because I picked out such a large avocado.)

My version turned out really thick (like ranch dressing) ~ I loved the consistency. And after tasting, I realized I could add jalapeno, garlic … lots of lovely would work with this dressing.

Spiced Beef Stew {with carrots & mint}

My friend, Roxann, introduced me to this lovely, warm stew. It’s special. From the tenderloin to the pumpkin spice to the fresh mint. It’s the perfect winter supper.
