52 Sunday Suppers: Valentine’s Day Dinner

Because it’s coming up … a little Valentine’s Day fun for your family.

This week’s 52 Sunday Suppers menu is all about family favorites. Kristin is sharing her coffee rubbed steaks and mushroom risotto ~ and I’m sharing my baked Brie mini appetizers and chocolate sheet cake {heart-shaped} cupcakes. Throw in a big green salad and you’ve got a winner!

For starters

… tiny baked Brie hearts. Mmmm.This recipe is a work in progress. I have made it 4 times and am still tweaking it. But one thing for certain, this pastry works best with it. It’s a pie crust recipe my mom used when I was growing up. Perfect texture for these appetizers.

Peg’s Pie Crust

1 3/4 cup flour * 1/2 teaspoon salt * 1/2 cup vegetable oil * 3 Tablespoons ice cold water

Mix flour and salt in a bowl. Whisk water and oil together in a measuring cup. Pour over dry ingredients and toss with a fork til almost combined. Roll out between 2 sheets of waxed paper.

After making the pastry, gently roll out. Grab a cookie cutter and go for it.

You’ll need two hearts for every one appetizer.

At this point, you can load up with tiny Brie pieces and sour cherry jam or only use the Brie.

Honestly, since the jam seems to find it’s way out of the pastry in the oven, I’d load up with Brie and when they’re done baking, I’d top with jam hot out of the oven and serve. That way you get more cheese and less mess.

Okay, back to business.

Brush the edges with an egg wash, then carefully place another heart atop. More egg wash on edges and top of hearts. Sprinkle with coarse sea salt. And bake for 15 minutes in a 350 degree oven ~ until light brown.

Sooo yummy. And easy. And impressive in a homey kinda way. That’s pie crust for ya. Pie is home.

Cake? Well, cake can be kind of uppity. Except Texas chocolate sheet cake. That’s a whole different story. And it’s why I make it at Valentine’s Day and on birthdays and any ole day in between.

I think your family will love it. And did you know you can make it just as easily into a cupcake? Or even heart-shaped cupcakes? Yep. Just make up the batter, pour 1 1/2 T. into a muffin lined tin ~ then slip a marble in.

See? Bake for 12 minutes or so at 350 degrees. After the cupcakes have cooled, spoon on the icing. Cute. Delicious. Messy.
