Almond Butter Cookies

Isn’t it nice when a mishap turns into something really delicious? These were a mishap.

I intended on making the best peanut butter cookie recipe ever after seeing all kinds ofย  lovely Valentine cookies on Pinterest. (I am defenseless when it comes to Valentine’s.) I got all inspired to try my peanut butter recipe with Dove hearts but upon dumping half the ingredients in a mixing bowl, I realized I had no peanut butter!

I haven’t had Jif in the house since I fasted from sugar.ย  But I still stock peanut butter ~ just the natural, sugarless kind. But no peanut butter? None?!

Enter … almond butter.ย  I had that sitting in the fridge. So I simply adapted the peanut butter recipe and it turned out fabulous!

After making the dough, form in balls then flatten out with the palm of your hand and cut out hearts. With a metal spatula, carefully move to cookie sheet.

Sprinkle lightly with sugar (or skip this step if you’d rather).

Press in a Dove dark chocolate heart (or skip this step if you’d rather. No. Actually. Don’t skip this step.)

Almond Butter Cookies

1 stick butter, softened * 1 c. brown sugar * 1 c. almond butter * 1 c. flour (add more if needed) * 1 t. baking soda * 1/4 t. salt (I omitted salt)

Thoroughly mix butter, sugar, and almond butter in a bowl with a rubber spatula. Combine flour, baking soda and salt ~ then add to butter mixture. Combine well. Roll into balls, flatten and cut out hearts. Carefully place on cookie sheet. Sprinkle with sugar.

Bake in pre-heated oven at 350 degrees for 8 – 10 minutes. Take out of oven and let sit on cookie sheet for another 5 minutes. Transfer to cooling rack. Makes about 2 dozen cookies.

I made them at home and used silpat. They were fragile but fabulous. Then I made them for my bible study group at Roxann’s and they didn’t come out as nice. Lesson: Don’t bake these cookies on an insulated cookie sheet. Do use silpat or parchment paper but make sure it’s a regular, cheapo cookie sheet.

The combination of almond butter and chocolate is lush. The Dove heart holds together but gets enormously melty ~ you can actually spread that dark chocolate all over the top of the cookie. Get a bit of cookie with a taste of chocolate in every bite.
