homemade cinnamon sticks

Yesterday, I buried this homemade cinnamon stick recipe in a 52 Sunday Suppers menu with barely a mention.

That was not nice of me. They cried sugar-cinnamony little tears about being passed over.

So to make good, I’m posting a quick little how-to make these beauties at home. So easy. Takes just a few minutes.

Homemade Cinnamon Sticks

1 package yeast (2 1/4 teaspoons) *  1 1/2 Tablespoons sugar * 1 cup warm water  * 1 1/2 teaspoons salt * 2 1/2 cups flour * melted butter * cinnamon sugar mix

Pre-heat oven to 400 degrees. Pour yeast and sugar into warm water.  Let sit 5 minutes. In another bowl combine 2 1/2 cups flour and 1 1/2 teaspoons salt~ add yeast mixture and mix thoroughly.  Let rest for 10 minutes. Knead dough slightly on a floured surface then pat out.

Gently transfer dough to baking sheet. Brush with melted butter and sprinkle generously with cinnamon/sugar mixture. Bake for 10-12 minutes.

Here is the dough, resting for 10 minutes.

You don’t have to worry about incorporating every little bit of flour. You’ll further incorporate during the kneading.

After allowing the dough to rest, gently knead (about 1 minute), then  pat it out to desired shape. Transfer to the cookie sheet.

I always use silpat lined cookie sheet because it keeps the dough tender and gooey.

Next brush with melted butter and sprinkle with cinnamon sugar. Then straight to the oven. Keep an eye on them ~ and pull them out when you like. My girls like these gooey, so I only bake about 10 minutes or so.

Yep. They come out looking all kinds of delish. And so easy.
