Tomato Soup & Grilled Cheese Croutons {sunday supper}

I am a self-avowed food jagger. One favorite food meal after meal, day after day. It can be a pretty bad thing. Especially when it’s cheese burgers and french fries. Or Fritos and wine. Yes. But this is my most virtuous and serious steady where food jags are concerned.

Fresh tomato soup with dill Havarti. It’s Paula Lambert’s recipe. And it’s outstanding! And healthy. With just a sprinkle of that creamy Havarti cheese. It was my one healthy jag.ย  See how light?

Fresh Tomato Soup w. Dilled Havarti

1/4 c olive oil * 2 clove garlic, minced * 3 green onions * 6 plum tomatoes, peeled, seeded & chopped * 1 (14 1/2 oz can) Italian plum tomatoes, chopped, including juice * 1/4 white wine * 3 c chicken broth * salt & pepper to taste * 4 oz Havarti w dill, shredded * 4 sprigs fresh dill

Heat oil in pan over medium heat. Add garlic & saute for 2 minutes, or til fragrant and nutty brown in color. Add scallions and saute for 1 minute. Add all tomatoes, including juice in can. Cook over medium heat, stirring til tomatoes are tender, about 15-20 minutes. Add wine and cook for 5 minutes. Add chicken broth and cook 10 minutes, stirring occasionally. Soup may be served as is, chunky, or it may be pureed in a blender for a smoother texture.

Pour into large, flat soup bowls. Sprinkle cheese over the soup. Garnish with dill.

Makes about 5 cups. Serves 4.

That is, until Kristin and I met to discuss this week’s 52 Sunday Suppers menu. She went and suggested we add grilled cheese croutons. Ohmygracious. What has she done? Loaded up this light, healthy soup with crunchy, super-cheesy croutons?!

Ahem. Yes.

I tested it out on my family and friends for our Sunday Supper. It was sick ridiculous … so delicious. Add in the spring-like weather here in Austin and dining al fresco. Completely euphoric.ย 

So because I love you. I need you to do 3 little things:

  1. Double this soup recipe every time you make it.
  2. Sip wine, open the windows and listen to The Civil Wars while making this soup.
